¼ cup of fat free buttermilk
2 spoonful of yellow mustard seeds (Restaurants in Mumbai prefer to use Dijon Mustard)
6 ounce Boneless chicken
1/3 cup dried and roasted bread crumbs
Same quantity of coarsely crushed walnuts
2 spoonful’s of grated parmesan cheese
1 spoonful of rosemary leaves, finely chopped
Table Salt (good restaurant for breakfast usually prefer Kosher Salt)
Some freshly ground black pepper
A bit of vinegar
How you do it
Since it is for the health conscious so we won’t be doing the usual deep frying as is typical of chicken recipes, instead preheat your microwave at 420⁰. Prepare a marinade by mixing buttermilk, mustard, a few drops of vinegar and salt to taste, then beat it. Dip the chicken while coating it well and keep aside. Now mix bread crumbs, a pinch of salt, walnuts, rosemary, cheese and black pepper and mix thoroughly. Now, take the chicken and coat it in this mixture. Now arrange a wire rack on a backing sheet and arrange the chicken pieces. Lightly brush a few drops of oil over it or use a cooking spray. Cook it for 15 minutes on the aforesaid temperature or till the chicken is done.
