With all the amazing food at all the resto- bars in Mumbai, it comes as no surprise when I say that I’ve had some of the best tenderloin steak in this wondrous city.
But, my intention was not to rant on and on about the sheer brilliance of Mumbai, it was delve right into a little recipe I’ve begun cooking all the time that I picked up in Mumbai!
1.Preheat an oven, then throw in some cut shallots coated with oil into a pie pan, season, and put it in the oven for around half an hour, until browned and tender.
2.Now, in a large-sized pot, mix 3 cups of beef broth and 3/4th cups of port wine, bring to a boil then cover and leave it on high heat for a half hour. Then, add 1.5 tsp tomato paste, and set it aside.
3.Pat 2 pounds of trimmed beef tenderloin roast dry, then sprinkle with thyme, salt and pepper.
4.Saute a few diced slices of bacon in a pan.
5.Remove the bacon, and cook the steak for about 7 minutes with the stove on medium heat.
6.Next, you’ve got to transfer the pan into an oven and roast the steak for approximately 25 minutes.
7.Now, remove the steak, and into the same pan, put your beef broth and port wine mix back in. Boil, then let the mix simmer. Mix about 1.5 tbsp butter and 1 tbsp flour into the broth and whisk continuously, and add 1.5 tbsp butter again.
8.Next, add the roasted shallots along with the bacon, and stir, then add salt and pepper to taste.
9.Slice steak, pour the sauce over it, and voila, there you have it!
